Itinerary for Charlie & Liam

Sunday night  8:30 - 10:15
   

 Start chevre (culture + rennet), 
     Start sourdough culture, feed white and rye starters



Monday     

10- 1
    Finish Chevre (about a 12 hour curding), Do Camembert, Do Feta
    Challah and Irish Soda Bread -- start with 2 simple white breads


Monday    

3:30 - 6:30  -- Bee time outside
    weather didn't work so we did keynote and charlie talking about bees



Tuesday    

9:30 - 1:15
    -- Manchego and Whey Ricotta
    -- Sauerkraut, dehydrate kale, yoghurt
    -- Rye sourdough, honey whole wheat


Tuesday evening 

(8 -10)
    Movie -- Into the Hive   

 

Wednesday  (1 - 6:30)
    -- Field Trip


Thursday  10 - 1
    

-- Romano and Whole milk ricotta and acidulated cheese if extra milk
    -- white sourdough with our starter,  dill bread with our cheese

              4:00 Gather Flowers  & Decorate

 - simple check in then took a walk around the farm /compost/ bee hive

Milk ( I could imagine having 20-24 Gallon milk total -- extra cheese is good, yoghurt)
so however I buy 24 - however many gallons Charlie brings
