Liam McDermott's profile picture

Liam McDermott works as a hands-on Healer, farm-to-table Caterer,  and Facilitator/Designer/Educator in Applied Permaculture. Liam received his BA in Literature from Stanford University in 1997, followed by 1000 hour Massage Certification from Esalen Institute, and an A.O.S in Culinary Arts from California Culinary Academy in 2004. He received his Masters degree in Integrative Ecosocial Design with Gaia University in the summer of 2016. He is also currently working toward his Herbalist Certification from East West Planetary Herbology in Santa Cruz, CA. Liam specializes in systems design, landscape design, nutrition, healing arts, herbalism, plant propagation, flower essences, community organizing and facilitation. He serves as the Director of Massage Services for Tassajara Zen Monastery and teaches courses on Applied Permaculture at Esalen Institute for over 12 years. He is the Executive Director for his own Farm to Table catering company, and creates flower essences for Energy Balancing and works both as the registrar and an advisor for Gaia University.

 

Nourishing and nurturing people has been my life's work for 18 years as a chef and a massage therapist/hands on healer.  Care of the Earth has emerged in this decade of my life as my growth opportunity to complement my "Care of the People" focus.  Designing my Baja homestead's water and energy systems in addition to my polycultural perennial food forest is where I feel alive with Mother Gaia these days.  I am inspired to continue my growth regarding ways in which humans can create regenerative communities while honoring the ecosystems in which they exist.
I am passionate about many aspects of Permaculture and hope to discover more as I refine these passions: Seeds (seed saving and harvesting edible), Soil management (including myco-remediation, compost, mulching), Energy (solar), Water (particularly drylands water techniques), Herbs (culinary and medicinal), communication and facilitation (NVC, Gestalt), Zone 0 (yoga, meditation, nutrition), animal husbandry (particularly goats and bees)
My family owns 1 acre of land in the desert in Baja so Drylands strategies and good desert ecosystems are of supreme interest. I enjoy information as a resource and can err on the side of gathering content. Baja is a great space for myself where I actively experiment with good land stewardship practices: I get my hands dirty every day.

 I have taken the past 15 winters tropically from Asia to the Americas studying meditation, yoga, tai chi, gardening, permaculture, cooking, and developing my own practices.

Current Projects

Chocolatier Subscripiton
Inspired by my Capstone OP 3: Chocolates and Cordials, I am starting a subscription process where I make chocolate 4 times a year and send this off to friends/clients who would like to receive my specialty chocolates, which will include truffles filled with different fillings such as: White Chocolate Maple Ghee caramel, White Chocolate with Saffron-honey bee bread, Dark Chocolate with Rosemary Bee Bread, Dark Chocolate with Gran marnier ganache and candied orange, Dark Chocolate with Spicy Chocolate ganache, Dark Chocolate with peanut butter honey cacao nib, White Chocolate with Guanabana jelly.

Nursery
Currently, I have hundreds of plants growing in my nursery.  I do not wish to compete with Mexican natives for plant nursery business so I specialize in exotic plants (which are edible and/or medicinal) that are less common in Mexican nurseries: myrrh, holy basil, dragonfruit, miracle fruit, wild black cherry, pitanga (suriname cherry), cashew, kaffir lime, cinnamon, allspice and moringa.

Landscape Design in Baja
I am in process of applying for Mexican residency so I can launch my Permaculture Design Consultation business in Baja.

Permaculture Courses in Baja
I am leading several 1 day workshops on my land in Baja.
Plant families that thrive in Baja focuses upon "plant families" and using the resources in the garden.
Introduction to Herbalism in Baja:  We offer a tour of my magical perennial polycultural food and medicine forest.  The hands on element of this day is making our own tincture and salve with ingredients from the land.
