Turkey Gravy : The Best Way
Turkey Gravy
The sauce we pour over our plate on the "day of decadence," the binder that holds the meal together, the gusto that can salvage an overcooked turkey - - it all adds up to the gravy. This simple concoction requires three elements: liquid, thickener and flavor. In our tests, this boiled down to chicken broth, roux (flour and butter) and pan drippings deglazed with a little white wine.
